About the Sauce: Clark Farm was our first partner in this series, and this year’s sauce might be one of the most complex yet. Built from a surplus of tomatoes, jalapeños, and hot wax peppers, it features a spicy jalapeño-tomato vinegar that started intense but mellowed into something really balanced and bright. Shiraz beets add a deeper sweetness, while a higher red tomato ratio brings natural body and acidity. The heat comes in layers—from the peppers and the vinegar—giving it a distinct, wave-like bite.
Uses: Add a teaspoon of this sauce to savory meals to bring a balanced and complex flavor. Great on sandwiches, salads or nachos.
