Aji Peach Cobbler à la Mode
If you think we’re crazy to suggest eating hot sauce with dessert, then allow
this cobbler to blow your mind!
The unique sweet heat of our Aji Punch, brought to you by its marriage of aji
peppers with local peaches, cherries, and plums, makes an extra-delicious
replacement for baking spices and an ideal foil to cool vanilla ice cream,
transforming an ordinary peach cobbler into a final course so good that you’ll
dream about it later.
Ingredients
For the filling:
- 2 pounds of peach slices, fresh or frozen
- 2–3 teaspoons of Aji Punch
- ¾ cup of brown sugar
- 4 teaspoons of flour
- a pinch of salt
For the topping:
- 1¼ cups of flour
- ¾ cup of granulated white sugar, plus more for sprinkling on top
- ½ teaspoon of baking powder
- a pinch of salt
- ¼ cup of milk
- ½ of a well-beaten egg
- 4 tablespoons of cold unsalted butter (or omit salt if using salted
butter) - vanilla ice cream for serving (Don’t skip this! You’ll thank yourself.)
Directions
1. Preheat your oven to 375°F.
2. In a casserole dish or pie tray, mix together all of the ingredients for
the filling and let them sit at room temperature for at least half an
hour, stirring occasionally, while the sugar breaks everything down.
When the peaches are soft and the mixture is nice and smooth, it’s
ready for the topping.
3. Meanwhile, in a large bowl, whisk together the dry ingredients for the
topping. In a separate bowl or cup, beat together the ½ egg and the
milk, and then use a spatula to stir them into the dry ingredients.
Once this mixture is well combined, gently spread it atop the peach
filling.
4. Slice the cold butter into small cubes and place them evenly onto the
topping. Sprinkle on some sugar, and then place it in the oven
uncovered for 45–50 minutes.
5. Allow it to cool for at least 10 minutes. Serve it with vanilla ice cream.
