ZLT (Zucchini, Lettuce, Tomato)

Introducing the refreshing vegan twist on the classic BLT sandwich: the ZLT (Zucchini, lettuce, tomato). Bursting with vibrant flavors, this delightful creation is a breeze to assemble. Let's kick things off by preparing a simple and delicious marinade for pan-frying the zucchini.

Ingredients:

  • 1 zucchini per 2-3 sandwiches
  • 1 heirloom tomato or 5-6 cherry tomatoes
  • 2-3 leaves of lettuce per sandwich
  • 2 slices of your favorite bread
  • 1 tablespoon of olive oil 
  • 1/2 tsp of ground peppercorn
  • 1 tablespoon of Brian Boru’s Curry Hot Sauce (more for topping)
  • Optional - hummus or mayo
  • Optional - cheese

Directions:

Preparing the marinade: 

  1. Mix 1 tablespoon of Brian Boru’s Curry, 1 tablespoon of olive oil, ½ teaspoon of peppercornSlice your zucchini and let sit in the marinate for at least 15 minutes, but up to 12 hours. 

Cooking:

  1. Heat up a skillet and pan fry the marinated zucchini. Cook on medium to high heat for about 3 minutes on each side, until lightly browned.
  2. Toast two pieces of bread. Extra bonus points if the bread is fresh and locally baked!
  3. Spread mayo or hummus on the bread (optional)

  4. Wash and place lettuce on top of the bread. 

  5. Slice tomatoes and put on top of the lettuce.

  6.  Place pan fried Zucchini on top of the lettuce and tomato. 

  7.  Feel free to add some cheese on top. My favorite is goat cheese topped with a little extra Brian Boru’s Curry.
